Cherry Clafoutis

I've been making clafoutis (classic French dessert) for years now. During the summer season you can use all kind of fruit like cherries, plums or apricots.  Since it requires only a small amount of the most basic baking ingredients I can make this dessert very last-minute. So if you're a fan of desserts with little work and a lot of payoff...Bon appetit!

INGREDIENTS
500 gr of fresh sweet cherries (pits removed)
3 eggs
75 gr sugar
75 gr of flour
A pinch of salt
250 ml of milk
2 teaspoons of vanilla sugar
Powdered sugar for dusting

METHOD
Preheat the oven to 190 C. Butter and lightly flour a baking dish. Toss in the cherries. Whisk the milk, eggs, sugars, salt and flour together until smooth.Pour into the baking dish.
Bake for 40-45 minutes or until lightly browned and a toothpick inserted into the center comes out clean. When you pull it put of the oven it will wiggle a bit which is normal. Place on a wire rack to cool. The clafoutis will have puffed up quite a bit and will deflate while cooling. When cool dust the clafoutis with powdered sugar.
