Speculaas cake

 
 
In Holland it's almost time for Sinterklaas.
A typical Dutch happening.
This weekend we already celebrated Sinterklaas with a whole group of friends. I baked a speculaas cake with spicy mini cookies (kruidnootjes in Dutch).
It's very easy to make and it's really delicious. Your whole house will smell amazing!
Also perfect for a lazy Sunday like today.
Stay inside on the couch with a blanket, it's dark early, so time for a hot cup of tea or coffee with a treat upon.

Ingredients
 
200g butter at room temperature
150g light brown sugar
50 g sugar
1 sachet vanilla sugar
4 eggs
200g self-raising flour
4 teaspoons speculaas herbs
1 teaspoon cinnamon
80 grams kruidnoten
1 pinch of salt
cake tin
butter for greasing
 
Preparation
 
Preheat the oven to 160 degrees and grease a cake tin with a little butter. Beat the butter (in pieces) along with the brown sugar, sugar, vanilla sugar and a pinch of salt about 15 minutes with the mixer until fluffy cream.
 
Beat in the eggs, one at time
Add the flour and the cinnamon and speculaas herbs to the butter mixture. Mix together well until a smooth batter.
 
Add the kruidnoten and stir with a spatula gently into the batter.
 
Pour the batter into the greased cake tin and bake the gingerbread cake in about 60 minutes in the preheated oven.
 
Let the cake cool on a rack and cut the cake into slices.
